It would be interesting if someone actually did a study on how much 800-1500GB or even just 100GB would be in size of pics/vids of legal porn, just to see the numbers. I may take that up one day.

Well, modern cameras, at good lighting, high resolution and fine quality, would usually take pictures in the range of 200-300kb per picture. That is what I see as the pattern in child model pictures too. That gives you 3 to 5 pictures per Mb. 3000 to 5000 roughly, per Gb (which coincides with the size of the sites). At 100Gb, that would give you 300 000 to 500 000 pictures. And more likely some number in the middle, as images small and large in byte size cancel each other out.

Now, video is a lot harder to quantify.

Even in modern times, cameras widely differ in several things. First, the resolution - is it as low as an older cellphone? as high as a professional or quasi-professional video-only camera? or what in between? Resolution affects file size for obvious reasons - every new pixel or frame increases the file size. Then you get to quality; even at equal pixels and frames, some cameras can shoot better quality, but usually at a cost in byte size. Of course, all of this is further complicated by the encoding used. In pictures, the unquestioned standard is JPG. In video, you get several different formats, each with its own several different possible encoding algorithms. Which would affect the file size too, whichever the pixels, frame and quality are. (Of course this is also true of pictures, but overridden because JPG is the most used format). And then we get to length... the longer, the bigger file size, but that says nothing.

All of these vary both in the child model and adult pornography markets, too; so it isn't intuitive which would be fair averages to use to cover the child pornography market. The smallest videos could be about 1Mb - that would be under a minute and older cellphone quality. The largest could themselves be probably over half a Gb - feature length and high quality. Which case is more extreme? Which is more typical? What is the median length and quality? Does anyone even know?

Combined with the traces of a money trail that would remain, it is a stretch to think of a billionaire industry. That payments could have happened in a small scale is one thing. That so many payments happen to add up to the numbers police and NGOs claim... ummmm...

Worse for offline. If you have enough trust on someone to pay for KP offline, you probably have enough trust to ask for it over a drive, rather than transmit it over the internet.
