"I doubt we do have definitive evidence for many things other than physical events
Archaeology and other searches for physical evidence have given us a lot. And are very important in confirming historical accounts, and often imparting new information about what they confirm. Additionally, they give us info which was lost to the historical record.
But they aren't the only source. While it is a softer science, one could still deduce the existence of a Latin-speaking ancient population from a study of the existing descendent languages.
Linguistics also helped us erase the notion that "Gypsies" were Egyptian and revealed that they were from India nearly 200 years before a study of Haplotypes gave further evidence to this. None of these are physical events, such as digging up camps along their ancient migration route. But they are evidence nonetheless.
"- Pompeii was probably not known very well until they dug it all up and discovered what actually happened."
Both of the Plinys were witnesses to the eruption of Vesuvius which took out Pompeii and Herculaneum; Pliny the Younger lived to write it down. So while the specific location of Pompeii became forgotten, the event itself has never fallen out of the record since it happened.
"Can't wait until the Dead Sea Scrolls are made public! Haha, as if they ever will if they contradict any of the central tenets of Christianity."
Why should any Xtian dogma fear the contents of the Dead Sea Scrolls? Many gnostic gospels have been publicly available which contradict various doctrines. All those doctrines emerged out of a process which allows the dismissal of things contradictory. And further the vigorous condemnation of Heresy ( and therefore its naming ) has been a known part of Church lore. Islam may have managed to hide most all conflicts regarding the formation of its canon, but Christianity hasn't.
While we no longer would accept Ghod sending a whirlwind to knock non-canonical texts off their pedestals as an explanation, we would certainly be able to dismiss the authors of the Dead Sea Scrolls as just another variant sect which "got it wrong," if it suited us.
