Question about e-mail

I wonder if I have been using an email client that does not send my messages anywhere. It says: the mail is sent end-to-end encrypted.

So -- if the recipient is not using the same client, does she/he really get my message?

Any suggestions about email clients that behave in a reasonable way?

(Btw I have not sent much email for a long time.)
